Salmón al Horno Fácil - Easy Baked Salmon

Me gusta mucho cocinar pescado al horno por varios motivos: es más sano, más sabroso, más limpio, más fácil y no dejas la casa apestando a pescado durante el resto del día! Además con el truco que os voy a contar no fallaréis nunca! En este caso os hablo del salmón, para otros pescados tal vez haya que ajustar el tiempo.

Cogemos un filete o una rodaja de salmón, lo ponemos en una fuente o bandeja para horno, lo salpimentamos (si utilizáis pimienta de colores estará todavía más rico) y lo regamos con un chorrito de aceite de oliva.
El truco está en meterlo con el horno sin precalentar y dejarlo 25 minutos. El resultado es un salmón jugoso y en su punto, perfecto!

Yo suelo acompañarlo con unas patatas que pongo en una fuente aparte con el mismo aderezo (sal, pimienta de colores y aceite de oliva) y las pongo en el horno a la vez que el salmón (eso sí, cortadas en láminas para que se hagan bien).

Con esto y una ensalada tenéis la comida resuelta!

I love cooking fish in the oven for several reasons: it is healthier, tastier, cleaner, easier and does not leave the house smelling like fish for the rest of the day! And if you cook it this way it’s a no fail!

We grab a slice of salmon, put it on a baking tray, and we add some salt, pepper (multi colour is much more tasty) and a splash of olive oil.
The trick is to put it in the oven without preheating and leave it for 25 minutes. The result is a juicy, flaky salmon, perfect!

I usually accompany it with some potatoes that I put in a separate baking platter with the same seasoning (salt, multi colour pepper and olive oil) and put them in the oven at the same time as the salmon (cut into slices so they are well cooked).

With this and a green salad you have your healthy lunch!

Plastilina Casera - Homemade Play Dough

Hoy os traigo una receta para hacer plastilina casera, que para mi gusto tiene un tacto y un olor más agradable y la podéis hacer del color que queráis, y además todos los ingredientes son comestibles (otra cosa ya es que queramos comérnosla, pero no sería la primera vez que un niño se toma un aperitivo de plastilina...)
  • 1 taza de harina
  • 1 taza de agua
  • 1/4 taza de sal
  • 1 cucharada de aceite vegetal
  • 2 cucharaditas de bicarbonato
  • colorante para alimentos
  • cacerola y cuchara de madera
Simplemente hay que poner todos los ingredientes (excepto el colorante) en la cacerola y calentar a fuego medio removiendo todo el rato, hasta que la masa se quede pegada en la cuchara y se despegue de la cacerola. 
Cuando se enfríe un poco la sacamos y la mezclamos con el colorante (a mí me gusta dividirla para hacer dos o tres colores) y listo, a jugar!

Today I have a recipe for homemade play dough, which in my opinion is nicer to touch and you can make in the color you want, and also all the ingredients are edible (not that you would want to eat it, but it wouldn't be the first time a kid has some play dough as a snack...)
  • 1 cup flour
  • 1 cup water
  • 1/4 cup salt
  • 1 tablespoon vegetable oil
  • 2 teaspoons baking
  • food coloring
  • pan and wooden spoon
You just put all the ingredients (except the coloring) into the pan and heat over medium heat stirring all the time, until the dough sticks to the spoon and pulls away from the pan. 
Then take it off (when it has cooled a bit) and mix with the coloring (I like to divide it to make two or three colors), and ready to play!

Bento de Crema de Zanahoria - Carrot Cream Bento

El bento de hoy consiste en crema de zanahoria acompañada de taquitos de queso de cabra y pan. La fruta iba aparte, creo que ese día le puse un plátano... 

Supongo que hay varias recetas para la crema de zanahoria, os cuento cómo la hago yo:

- Pongo media cebolla a pochar en una cacerola con un poco de aceite de oliva virgen extra.
- Añado 4 zanahorias y 1 patata mediana, peladas y cortadas, y cubro con agua (con esta cantidad de agua se consigue una crema bastante espesa, normalmente la hago así para Alejandro y luego añado algo más de agua para nosotros)
- Cocino a fuego medio hasta que la patata y la zanahoria están tiernas.
- Retiro del fuego, trituro y corrijo de sal. 

En este caso le añadí un yogur antes de triturar, siguiendo el consejo de una amiga, de esta manera aumentamos la cremosidad y el valor nutritivo, pero sin el yogur también está deliciosa y es más ligera.

Today's bento consists of carrot cream accompanied by goat cheese cubes and bread. The fruit was apart, I think that day I it was a banana... 

I guess there are several recipes for carrot cream, I explain how I make it:

- I put half an onion to fry in a pan with a little extra virgin olive oil.
- I add 4 carrots and 1 medium potato, peeled and cut, and cover it with water (with this amount of water, the cream will be quite thick, I usually make it thick for Alejandro and then add some more water for ours)
- Cook over medium heat until the potatoes and carrots are tender.
- Put away rom fire, blend and add salt if necessary.

In this case I added a yogurt before blending, on the advice of a friend, this way we increase the creaminess and nutritional value, but without yogurt also is delicious and it's lighter.

Bento de Pavo "Corn Flakes" - "Corn Flakes" Turkey Bento

Hoy os traigo un bento rico rico compuesto de arroz salteado con verduras y pavo rebozado con "corn flakes". 
Si no conocéis la receta del pavo (o pollo) con "corn flakes" os diré que está muy rico, y más aún la versión que nosotros hacemos, en la cual añadimos sésamo al rebozado. Aquí va la receta:

Ingredientes:
- Filetes de pechuga de pavo o pollo
- Huevo
- Corn Flakes
- Sésamo

1. En un plato batimos el huevo y en otro ponemos los "corn flakes" algo machacados y el sésamo.
2. Pasamos los filetes por el huevo y por los "corn flakes" y los freímos con el aceite bastante caliente.

Cómo veis, no tiene misterio y está muy rico, a los peques les encanta el rebozado crujiente!

Today's yummy bento consists of sauteed rice with vegetables and turkey breaded with "corn flakes".
If you do not know the recipe for turkey (or chicken) with "corn flakes" I will say that is really tasty, and even more is the version that we make, where we add some sesame seeds. Here is the recipe:

Ingredients:
- Turkey or chicken breast fillets
- Egg
- Corn Flakes
- Sesame seeds

1. In a bowl we beat the egg and in another bowl we put the lightly crushed  "corn flakes" and sesame.
2. We spent the fillets in the egg and the "corn flakes" and fry in very hot oil.

You see, no mystery here and it's yummy, the kids love the crispy batter!

Ramen con Pollo - Chicken Ramen

El Domingo hicimos un plato que a pesar de ser muy sencillo y muy popular, no habíamos hecho hasta ahora. Se trata de ramen, en este caso con verduras y pollo, y os puedo decir que repetiremos!

Aquí va la receta:
(Para 4 personas)

- 4 filetes de pechuga de pollo o pavo
- 350 gr de noodles (fideos), yo utilicé "chow mein noodles"
- 4 zanahorias
- 1/2 col
- setas shiitake al gusto (se pueden sustituir por otras setas)
- 6 tazas de caldo de pollo o verduras
- 1/2 taza de salsa de soja 
- 1/2 taza de mirin (vino de arroz dulce, podéis utilizar otro vino dulce que tengáis)
- 1 cucharadita de dashi (condimento a base de pescado, no es imprescindible pero le da un toque especial)

1. Cortamos las verduras en juliana. Reservamos.
2. Salpimentamos los filetes de pollo y los hacemos a la plancha, reservamos.
3. Ponemos el caldo a hervir y añadimos la salsa de soja, el mirin y el dashi.
4. Ponemos los fideos en el caldo y cocinamos durante 1 minuto.
5. Agregamos las verduras y cocinamos hasta que los fideos estén listos (aprox. 1 minuto más)
6. Servimos en un cuenco y a comer!


Como veis es un plato sencillo y rápido, y se puede hacer con los ingredientes originales o bien sustituyendo algunos ingredientes por otros que tengamos más a mano, entonces tendremos unos fideos ramen "a la española" ;)

On Sunday we made a dish that despite being very simple and very popular, we had not done before. It's ramen, in this case with vegetables and chicken, and I can say that we will repeat!

Here is the recipe:
(Serves 4)

- 4 chicken or turkey breast fillets
- 350 grams of noodles, I used "chow mein noodles"
- 4 carrots
- 1/2 cabbage
- Shiitake mushrooms (can be substituted by other mushrooms)
- 6 cups chicken or vegetable broth
- 1/2 cup soy sauce
- 1/2 cup mirin (sweet rice wine, you can use another sweet wine that you have)
- 1 teaspoon dashi (fish seasoning, not essential but adds a special touch)

1. Cut vegetables into julienne. Reserve.
2. Add salt and pepper to the chicken fillets and grill, reserve.
3. Put the broth to a boil and add the soy sauce, mirin and dashi.
4. Put the noodles in the broth and cook for 1 minute.
5. Add the vegetables and cook until noodles are ready (about 1 more minute)
6. Serve in a bowl and eat!

As you see it is a quick and easy dish, and can be done with the original ingredients or substituting some ingredients for others who have to hand, then we will have ramen noodles "Spanish";)

Leche de Coco Hecha en Casa - Homemade Coconut Milk

Llevo un tiempo intentando encontrar una leche vegetal que realmente me guste, y creo que por fin la he encontrado! Se trata de la leche de coco, que además podemos hacer en casa fácilmente.

Os dejo un video de www.mamanatural.com y como está en inglés os indico las cantidades, aunque depende de la consistencia que queráis darle a vuestra leche. Como veréis, he doblado la cantidad de la receta porque de esta manera nos queda más o menos una botella de 1 litro.

- 4 tazas de coco rallado
- 6 tazas de agua


La leche de coco tiene muchas propiedades beneficiosas, entre otras:

- Alto contenido en hierro (1 taza cubre 1/4 de la CDR)
- Alto contenido en Vitamina C, que mejora el sistema inmunológico.
- Aunque no es muy rica en Calcio, sí lo es en Fósforo, esencial para unos huesos fuertes.
- Alto contenido en Potasio, que ayuda a bajar a presión arterial.
- Alto contenido en Magnesio, que ayuda a relajar los músculos.
- Alto contenido en Selenio, que ayuda a disminuir la inflamación de articulaciones y ligamentos.
- La grasa de coco es aproximadamente en un 92% grasa saturada; sin embargo se considera una grasa natural muy saludable. Los beneficios para la salud de la grasa de coco se deben a su composición de aproximadamente 65% de triglicéridos de cadena media (TCM). Concretamente, alrededor del 50% de la grasa de coco es un TCM llamado ácido láurico, que tiene propiedades anti-microbianas muy potentes, y ayuda a mejorar el metabolismo.

For some time I have been looking for a vegetable milk that I really enjoy, and the search is over: It's coconut milk, and we can easily make it at home. 

Here's a video by www.mamanatural.com, where you can see how to make it. To get about 1 litre of coconut milk, I usually double the amount that she gives.

Coconut milk has many beneficial properties, including:

- High in iron (1 cup covers 1/4 of the RDA)

¿Qué os parece empezar el día con unas tostadas de este delicioso pan? Es lo que yo voy a hacer en cuanto termine de escribir este post! Aquí va la receta para un pan de 1 kg:

Ingredientes:
- 450 ml de agua
- 2 cucharaditas de sal
- 250 gr de harina de trigo
- 250 gr de harina de trigo integral
- 200 gr de harina de centeno integral
- 9 gr de levadura fresca (o 1 cucharadita de levadura seca)

En la panificadora yo he utilizado el programa "Pan Francés", pero supongo que el de "Pan Básico" o el de "Pan Integral" también irían bien.

A desayunar!



What about starting the day with some toasts made with this yummy bread? That's what I'm going to do just after writing this post! This is the recipe for a 1 kg bread:

Ingredients:
- 450 ml water
- 2 teaspoons salt
- 250 gr wheat flour
- 250 gr wholemeal wheat flour
- 200 gr wholemeal rye flour
- 9 gr fresh yeast (or 1 teaspoon dry yeast)

I have set the "French Bread" program, but I guess "Basic Bread" or "Wholemeal Bred" will also turn out well.

Garbanzos crujientes / Crispy chickpeas

Hace unos días probé esta receta y nos ha encantado! Es sana, sencilla, muy rica y una buena manera de aumentar nuestro consumo semanal de legumbres. Ideal para picar entre horas o para un apertitivo.

Ingredientes:

- Garbanzos (cocidos)
- Aceite de oliva virgen extra
- Sal
- Aderezo (yo utilicé la mezcla de especias para guacamole de Old el Paso)


Una vez cocidos los garbanzos los secamos, los ponemos en una bandeja de horno y los regamos con una cucharada de aceite de oliva y mezclamos para que todos se impregnen bien.
Los metemos al horno precalentado a 180ºC unos 30 minutos o hasta que los garbanzos estén dorados y crujientes.
Sazonamos y aderezamos con las especias y listo. Adictivos!

A few days ago I tried this recipe and we love it! It is healthy, simple, yummy and a good way to increase our consumption of vegetables weekly. Ideal for snacking or a appetizer.

Ingredients:

- Chickpeas (cooked)
- Extra virgin olive oil
- Sal
- Dressing (I used the spice mix for guacamole Old El Paso)


Once we have cooked the chickpeas, we dry them and put them in a baking tray with a tablespoon of olive oil and mix so that all are well soaked.
We put them in a preheated oven at 180ºC for 30 minutes or until chickpeas are golden brown and crisp.
We season them with salt and the spices and ready. Addictive!

Fiesta de Cumpleaños / Birthday Party



Para celebrar el cumpleaños de Alejandro con la familia quería una merienda sencilla y saludable, basada en la fruta, así que esto es lo que preparé:

- Bolitas de sandía y melón
- Bolitas de zanahoria y coco (receta más abajo)
- Manzana con mantequilla de nuez
- Plátano con virutas de chocolate
- Para beber: Zumo de naranja y fresa, zumo de fresa, y leche
- Y por supuesto, la tarta! (gracias mamá!)

For Alejandro's birthday party with the family I wanted a simple and healthy snack, based in fruit, so this is what we had:

- Watermelon & melon balls
- Carrot & Coconut balls (recipe below)
- Apple with walnut butter 
- Banana with chocolate topping
- Drinks: Orange-strawberry smoothie, orange juice and milk
- And, of course, the cake! (thank you mum!)


Bolitas de sandía y melón / Watermelon & melon balls 
Bolitas de zanahoria y coco / Carrot & coconut balls


Bolitas de zanahoria y coco:
- Zanahoria
- Coco rallado
- Azúcar moreno o miel

Se cuecen las zanahorias y se trituran. Se mezclan con el coco rallado hasta que la mezcla quede con la consistencia adecuada y se endulza con un poco de azúcar moreno o miel al gusto. Se hacen las bolitas y listo!
Se pueden congelar las bolitas y servirlas semi-heladas.

Carrot & coconut balls:
- Carrot
- Shredded coconut
- Brown sugar or honey

Boil the carrots until soft and mash them. Mix with the coconut until you get the desired consistency and sweeten with brown sugar or honey. Make the balls and ready!
You can freeze them and serve them semi-frozen.

Zumo de fresa-naranja, zumo de naranja y leche / Strawberry-orange smoothie, orange juice and milk

Bento de lentejas /Lentil Bento

Por suerte a Alejandro le gustan bastante las legumbres, así que marchando un bento de lentejas!


- Las lentejas son las mismas que cociné para nosotros, con cebolla, patata y zanahoria y un poco de chorizo, pero a él se las puse sin chorizo y con muy poquito caldo.
- Para acompañar un poco de Pan de 4 Cereales hecho en casa. 
- Y por supuesto una ración de fruta: unas fresas.

- I cooked the lentils for us with onion, potato, carrot and a little bit of chorizo, but for him I packed them without chorizo.
- Some homemade 4 Cereal Bread on the side.
- And of course a fruit portion: some strawberries.

Batidos verdes / Green smoothies

Acabo de tomarme mi batido verde de hoy y me he acordado de que no he escrito ningún post sobre este tema! Yo me he aficionado desde mi visita a Biocultura hace un mes y medio, y creo que es una buena idea! Este en concreto es de naranja y espinacas, que me parece una buena combinación porque además de que la mezcla de sabores está bastante bien, la vitamina C de la naranja es el complemento ideal para absorber el Hierro de la espinaca. Pan de 4 cereales / 4 Cereal bread


Hoy os dejo una de las recetas de pan que más suelo hacer. La he ido adaptando a base de probar con diferentes cantidades de cada tipo de harina, y cada vez que la hago sigo experimentando! Ahí va:


Medidas para un pan de 750 gr:
- Agua: 380 ml
- Aceite de oliva virgen extra: 1/2 cucharada sopera
- Sal: 1 y 1/2 cucharada sopera
- Miel o azúcar moreno: 3/4 cucharada sopera
- Harina de trigo: 200 gr
- Harina integral de centeno: 150 gr
- Harina integral de espelta: 125 gr
- Copos de avena: 60 gr
- Levadura seca: 2/3 cucharadita
- Semillas de lino: 20 gr


Se ponen los ingredientes en la panificadora en el orden indicado, las semillas de lino se añaden tras el primer amasado (mi máquina emite un pitido de aviso, supongo que la mayoría lo hacen). Yo utilizo el programa de "Pan francés", pero con el de "Pan básico" también queda bien.

Today I'm giving you one of the bread recipes I usually do. I've been adapting it by trying  with different amounts of each type of meal, and every time I keep trying different things! Here it goes:

Measures for a 750 gr bread:
- Water: 380 ml
- Extra Virgin Olive Oil: 1/2 tablespoon
- Salt: 1 and 1/2 tablespoon
- Honey or brown sugar: 3/4 tablespoon
- Wheat flour: 200 g
- Wholemeal rye: 150 gr
- Wholemeal Spelt: 125 gr
- Rolled oats: 60 gr
- Dry Yeast: 2/3 teaspoon
- Flax seed: 20 g
Put the ingredients in the breadmaker in the order listed, flax seeds are added after the first kneading (my machine emits a warning beep, I guess most machines do). I use "French bread" program, but "Basic bread" program works well too.

Hoy quiero compartir con vosotros una receta de www.lospeques.com que he descubierto hoy mismo y me ha encantado. Se trata de una mantequilla de nuez que desde ahora va a formar parte de muchas de nuestras tostadas en casa! He hecho una poquita para probarla y es cierto que resulta adictiva, está riquísima!

Bollo de leche con pasas y arándanos / Raisin & cranberry milk bun
Este es un pan muy tierno ideal para el desayuno o la merienda, pero si se suprimen las pasas y los arándanos también puede acompañar comidas ya que no es un pan dulce.


Aquí va la receta, las medidas son para hacer un pan de un kilo:
- 315 ml de leche
- 70 g de mantequilla o margarina
- 2 cucharaditas de sal
- 3 cucharadas de azúcar moreno
- 555 g de harina de trigo (yo en este caso puse mitad de harina blanca y mitad de harina integral)
- 18 g de levadura fresca
- 35 g de pasas
- 35 g de arándanos secos


Se ponen en la cubeta de la panificadora los ingredientes en el orden indicado, a excepción de loas pasas y los arándanos que se añaden cuando suena el pitido (tras la primera fase de amasado).


Que lo disfrutéis!
